Mini Eggs Chocolate Chip Cookies

If you didn't receive Mini Eggs this past weekend, I feel sorry for you because they are hands down the best easter chocolates! I suggest you run to the store and pick some up right now because they're most likely on sale. If you received way to much Mini Eggs, well this recipe is for you! It's super easy to do and delicious (like all recipes on this blog). Here is what you'll need to make these Mini Eggs Chocolate Chip Cookies:

1 cup  softened butter
2 eggs
3/4 cup granulated sugar ( ran out of brown sugar)
2 teaspoons vanilla extract
2 1/4 cups flour
1 teaspoon baking powder ( ran out of baking soda)
1/2 teaspoon salt
1 cup chocolate chips
About 1 cup of crushed mini egg

Preheat oven to 375 degrees, and use a mixer to combine the butter and sugar. Then add the eggs and vanilla and blend until it's all combines. 

Mix all the dry ingredients ( flour, baking powder and salt) together in a medium bowl and slowly add mixture to wet ingredients until its all combined. 

Fold in the chocolate chips and crushed mini eggs. 

place a tablespoon size dough balls on the baking sheet, making sure they're about 2 inches apart and let it bake for 8-11 mins. 

Once its done, let it cool for 5 minutes then transfer the cookies to a wire rack to cool completely.

you'll end up with these thick delicious cookies, filled with easter goodness. You can really make this recipe your own. I ran out of ingredients, so I had to improvise but they turned out great! you can take out the chocolate chips, you can add peanut butter chips ( my new obsession) or add whatever cookie ingredient you like.
